Breads: Buttermilk Biscuits
Preheat the oven to 425. Whisk dry ingredients together, then cut in butter. Add buttermilk and mix until moistened. Drop by spoonfuls onto greased cookie sheet, or roll out and cut with cookie cutters, then place on greased cookie sheet. Bake 15 minutes until golden.
Desserts: Lemon Meringue Pie
Bake a home made or store bought crust in a 9 inch pan. Let cool. Preheat oven to 325. In a medium saucepan, add the sugar, conrstarch and salt for the filling. Whisk thoroughly and then add in the water, lemon juice and zest for the filling. Then whisk in the egg yolks until no yellow streaks remain. Then cut the butter into small pieces and add. Turn on the stove to medium heat and stir with a wooden spoon or spatula. Bring it to a simmer and then cook for 1 minute. The filling should be very thick. Pour into the pie crust and press a sheet of plastic wrap onto the surface. Immediately prepare the meringue topping.
When the meringue is ready, remove plastic wrap and spread meringue over the hot filling, anchoring it to the crust all the way around.
Bake 20 minutes and cool completely before serving.
Start the meringue by adding the corn starch and sugar in a small saucepan. Mix well, then add the water. Bring to a boil over medium heat, stirring constantly, then boil for 15 seconds. It should be thick and translucent. Cover with a lid and set aside. In a glass or metal bowl, beat the egg whites until foamy, then add the vanilla and cream of tartar. Beat until soft peaks form. Then slowly beat in the sugar. Once it is all added, beeat on high until the peaks are very still, but not glossy. Reduce speed to low and beat in cornstarch paste one tablespoon at a t time. After it's all added, beat on high for 10 seconds.
Main Dishes: Melt In Your Mouth Thin-Sliced Steak
In a small mixing bowl, combine all ingredients. Place steak on center of a sheet of tin foil. Place a small amount of the seasoning mix on the steak, then quickly turn the steak over and add some more seasoning to the other side. Place the foil on a baking sheet and bake at 400 degrees until desired done-ness (about 20 minutes?).
Other: Mini Breakfast Pies
Preheat oven to 400 degrees F (200 degrees C). In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cool until sausage is evenly brown. Drain, crumble and set aside.
Separate the dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk, and divide between the cups. Sprinkle tops with shredded cheese. Bake in preheated oven for 18 to 20 minutes, or until filling is set.
Soup & Salad: Carla's Savory Stew
Roll cubed meat in seasoned flour. Heat oil in heavy pot, then brown the meat in the fat. Cover with boiling water and simmer 1 1⁄2 hours.
Add the remaining ingredients, then simmer 30 minutes. Salt and pepper to taste.
