Make the vinaigrette and let it sit for 15 minutes. While it is sitting, prepare the vegetables. Spoon in about 1⁄2 of the vinaigrette, stirring gentley to coat all of the vegetables. Taste. If you want more lime flavor, add more vinaigrette. Season with additional salt, if needed.
Chop all of the vegetables and combine in a large bowl. Combine well, being careful to preserve the integrity of the avocado.
Combine the cilantro, jalapeño, lime juice, vinegar and a pinch of salt in a bow. Stir until well combined. Slowly drizzle in the olive oil, whisking rapidly to emulsify. Taste, and season with more salt if needed.
