Ingredients
- 3 pints (or more) fresh strawberries
- 1 ½ cups sugar
- 1 ½ cups cold water
- 3 tablespoons corn starch
- dash salt
- 6 ounces wild strawberry gelatin
- 6 tablespoons butter
- 4 teaspoons vanilla extract
- 5 drops red food coloring
Crust
- 2 cups flour
- dash salt
- ¾ cups butter
- 2 tablespoons sugar
Directions
Wash and hull the berries, cut in half. Mix sugar, cold water and cornstarch together in sauce pan with wire whisk. Simmer until thick and clear, stirring often. Remove from heat. Add gelatin, salt, butter, vanilla, food coloring. Stir until well mixed and cool. Pour over the berries to coat. Pour glazed berries into the crusts. Refrigerate until thoroughly cooled and glaze is set. Top with whipped cream and garnish with whole berries.
Crust
Cut the ingredients together and press into bottom of 2 9-inch pie pans. Bake 350 degrees F for 10 to 15 minutes. Let cool.
