Ingredients
- 1 pound ground beef
- 1 bunch cilantro
- 1 can (15 ounces) mild green enchilada sauce
- 10 cups broth made from bouillion cubes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- salt, to taste
- pepper, to taste
- 3 tomatoes
- 1 large red onion
- avocados
- mozzarella cheese
- tortilla chips
Directions
Brown the ground beef with a little salt and pepper. Set aside. Chop the cilantro, and remove stems if you feel like it 🙂 I usually try to for a while but then give up and just remove the big ones that bother me.
In a blender, combine 2 cups broth and 3⁄4 of the cilantro. Blend well until cilantro is very finely chopped. Put the cilantro broth in a pot. Add the beef, remaining broth, enchilada sauce, chili powder and cumin. Add more salt and pepper, or more chili powder or cumin until it tastes the way you like it.
Chop the tomatoes and onion to make a fresh salsa. Add the remaining 1⁄4 of the cilantro leaves and stir. Serve soup with the salsa, avocados, cheese and tortilla chips as optional toppings.
