Ingredients
- 1 tablespoon olive oil
- 1 medium green pepper, diced
- 4 chicken breasts cut into 1 inch pieces
- 1 medium onions thinly sliced
- 4 zucchinis unpeeled and thinly sliced
- 1 ½ teaspoons dried basil
- 2 tablespoons fresh parsley, crushed or finely chopped
- 8 ounces fresh mushrooms, sliced
- 16 ounces canned diced tomatoes
- 1 clove garlic, minced
- Cooked rice
Directions
Heat oil in skillet. Add chicken and sautee until lightly browned. Add zucchini, onion, green pepper and mushrooms. Cook about 15 minutes, stirring occasionally. Add tomatoes, garlic, basil, parsley and some pepper. Stir and continue cooking about 5 minutes. Serve with rice.
