Ingredients:
- 1/2 cup of oil
- 1 cup of sugar
- 3 eggs
- 2 cups of all purpose flour sifted
- 1 tsp of salt
- 2 tsp of baking powder
- 1 cup of chocolate powder such as Nescau or Nesquik
- 1 cup of hot water
- All ingredients for brigadeiros, to be prepared separately and used as a topping.
Directions:
Heat oven to 350 degrees. Grease a bundt pan and set aside. In a medium bowl, combine the flour, salt, baking powder, and chocolate powder, then set aside.
In a large bowl, mix the oil and sugar until well combined. Then add eggs one at a time, mixing well after each addition. Add 1/3 of the flour mixture into the egg mixture and fold in gently until combined. Then add half of the hot water and fold until combined. Repeat until all flour mixture and water have been added.
Pour the batter into the prepared pan and bake 35-40 minutes or until fork inserted comes out clean.
Prepare brigadeiro as a topping, cooking for slightly less time than called for, for a slightly thinner brigadeiro.
