Ingredients:
- 1 2/3 cups cornstarch
- ⅓ cup all-purpose flour
- ⅔ cup white sugar
- 3 tablespoons grated coconut
- 1/4 teaspoon salt
- ¾ cup oil
- 1 teaspoon vanilla
Directions:
Heat oven to 375 degrees.
Whisk together cornstarch, flour, sugar, coconut, and salt. Add oil and vanilla, mix until well combined.
Cover a cookie sheet with parchment paper. Roll out dough into balls and place on prepared sheet, then flatten lightly with a fork.
Bake for 7 to 10 minutes or until slightly browned on bottom but still white on top. Cool 3 minutes on wire rack and enjoy!
