Ingredients:
- 1/2 cup salted butter (room temperature)
- 1/2 cup sugar
- 3 eggs
- 1/3 cup coconut milk
- 1/3 cup sweetened condensed milk
- 1 teaspoon vanilla
- 1 1/2 cups unsweetened coconut
- 2 tablespoons all purpose flour, sifted
Directions:
Heat oven to 350 degrees. Grease an 8 inch square pan and line with parchment paper, leaving some of the paper hanging over the edges.
Cream the butter and sugar together in a stand mixer until light and fluffy. Add eggs one at a time, mixing well after each egg. Add the coconut, sweetened condensed milk, and vanilla, and mix well.
Fold in the coconut until just incorporated, then fold in the sifted flour and pour into the prepared pan. Bake for 30 minutes, then remove from oven and let rest for 10 minutes. Enjoy!
