Ingredients
- 1 ⅓ cups boiling water
- 1 cup quick cooking oats
- 1 cup sugar
- 1 cup brown sugar
- ½ cups shortening
- 2 well-beaten eggs
- 1 ½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoons salt
Frosting
- ½ cups brown sugar
- 6 tablespoons melted butter
- ¼ cups canned milk
- 1 cup shredded coconut
- 1 teaspoon vanilla extract
Directions
Pour boiling water over quick oats, let stand 20 minutes. Mix together with flour, baking soda, cinnamon and salt. In a separate bowl, mix together sugar, brown sugar, shortening and eggs.
Pour into a pan, alternating layers of the oat-flour mixture with the sugar-egg mixture. Bake at 350 degrees F for 45 minutes. Make the frosting and set aside.
Frost immediately after baking, then place under broiler until bubbles appear.
