Ingredients:
- 1 teaspoon butter
- 1 teaspoon white sugar
- 1 (14 ounce) can sweetened condensed milk
- ½ cup unsweetened shredded coconut
- 2 eggs
- 1 pinch finely grated Parmesan cheese
Directions:
Preheat oven to 350 degrees. Grease a cupcake pan and coat well with sugar. Mix all ingredients in a bowl until well combined.
Pour into cupcake pan, filling each cup ¾ full. Fill a jelly roll pan (cookie sheet with a lip) with 1 inch of water. Place cupcake pan on top of jelly roll pan to create a double boiler.
Bake until golden brown—about 10 minutes. Enjoy!
